Eunice's Everyday Fruitcake
This simple fruit cake is really easy to put together and lasts for a week or so in a sealed tin.
11 oz flour + 1 teaspoon baking powder
8 oz soft butter (butter MUST be SOFT)
8 oz caster sugar
4 eggs
3 tablespoons milk
2 ½ oz cherries
4oz of chopped nuts (1 x 100g bag)
1 ½ lbs mixed fruit (2 x 375g bags)
Bake for 1½ hours at 140oC.

- Line a 9inch square or round tin as demonstrated.
- Beat all ingredients together for 1 ½ minutes
- Sprinkle some split almonds on top.
Bake for 1½ hours at 140oC.
